MY QUICK SUPER SPRING SALAD & HOMESENSE HAUL // RECIPES

Some of the things I love about Spring is the early morning light, the spring blossoms, super quick spring salads and the occasional picnic weather permitting. Apart from the general spring clean and declutter that ritually takes place I have been focusing the past few months on self care, investing in mind, body and spirit so to speak. 

The easiest place for people to make change is in the food we eat, now I'm not suggesting in anyway that I'm all saintly and have cut out all the bad stuff from my diet, I mean I like a cadbury's cream egg as much as the next person, but I am trying to make informed decisions when it comes to food and trying enjoy as much good stuff as possible.

At the beginning of the year I was diagnosed with Premature Ovarian Failure (POF), yep at the age of 36 my eggs have abandened ship and left me on the brink of infertility. After enduring three miscarriages since Felix was born, first came shock, then denial and now a renewed commitment to look after myself and do the best I can for my body, after all it's the only one I have and it deserves it.

One of my favourite go to lunches or sharing plate with family and friends are super salads. They're light, perfect for slightly warmer weather, tasty and look oh so pretty. After I visited HomeSense and saw their new range for Spring, I couldn't help but indulge in some stylish new pieces for the kitchen and of course trial them out with a little recipe!

This lunch is so easy to make and is super tasty and quick to whip up, plus the leafy green are packed with Folic Acid and other good stuff. 

SUPER QUICK SPRING SALAD

To make wash and combine the following:

Handful of Spinach - Low in calories / 25 % of daily Iron intake  / rich in Vitamin B6, A, K
Handful of Swiss Chard - Rich source of omega 3 / Vitamin K / Helps with anaemia 
Handful of Romaine Lettuce - Rich in Protein / Calcium / Omega 3
Chopped Peeled Cucumber - Rich in Potassium and Antioxidants (add some to your water too for a refreshing drink)
Peeled halved Walnuts - Rich in Omega 3 / Vitamin E / potential health effects against cancer, ageing and inflammation
Vine Cherry Tomato's - Low calorie / Rich in vitamin C / Potassium
Artichokes - High in fibre / folate / Vitamin K
Sprinkle of Omega 3 Rich super seeds 

To accompany the salad I added wholewheat wraps with tazkiki, falafel, sliced radishes and avocado. YUM! For a quick healthy snack to starve of the chocolate fix I made up some apple slices, topped with almond butter, cashew nuts and various seeds. Felix is a huge fan of this healthy treat as an after school snack.

I picked out a variety of soothing blues and pink hues for the kitchen, with this gorgeous Sophie Conran Heart shaped dish and tea towels, and a dusky pink collinder matched with  marble and wood boards for the food. HomeSense also have a fab Easter Range in right now too.

We feasted and filled our selves up and felt good knowing we've given our bodies a bit of a nutritional boost too! What is your go-to quick spring dish? I'd love to hear some recipe ideas.

  7. I'm so sorry to hear your news lovely, but good to hear that you're trying to be positive and healthy when I imagine it's not the easiest thing to do at times. I'm a big believer in looking after your body and know that certain changes I made had a huge impact on my health issues. This salad looks amazing and I'm loving your styling, the heart bowl is so cute! x

  9. I do love a crunchy salad, especially with a radish involved. They were slagging radishes off on Gardener's Question Time last week and I was shocked - who doesn't love a radish?
