QUICK ASPARAGUS AND GOATS CHEESE TART


When your day starts with an excitable child bouncing on you at crazy o'clock in the morning, the last thing you feel like doing is cooking up a storm when tea time rolls around. So facing one of these days last week, I thought I would share a super simple, quick and easy recipe that looks good and tastes yummy without all the effort.

You'll need:
Jus-Rol puff pastry
Asparagus
Goats cheese
Cherry tomatoes
Pesto
Spinach
Virgin olive oil

To make:
1. First you'll need to roll out your ready to cook pastry on to a baking sheet and pre-heat the oven to 210 degrees celcius.
2. Snap off the bottom of the asparagus and place in a steamer for 3-5 minutes until bright green. I use a steamer that sits on the hob and is tiered allowing me to steam a few things at one.
3. At the same time lightly steam some of your spinach, a hand full at most.
4. Slice the goats cheese and put to one side.
5. Spread the pesto over the pastry sheet leaving 1.5cm around the edge.
6. Arrange the asparagus, goats cheese, cherry tomatoes and spinach onto the pastry, the messier the better and drizzle with a small amount of virgin olive oil.
7. Place in oven and bake for 15-20 minutes, checking that the edges don't burn.
8. Bring to the table, serve and enjoy.



You can add other ingredients to alter the taste, next time I might add some black olives too. What is your quick go to recipe after a busy day?
