I've often toyed with the idea of giving becoming a vegetarian as I pretty much only eat fish nowadays and always get super squeamish when it comes to handling raw meat, but I thought taking that extra step would make it harder to cook at home, especially as we already have to manage a gluten intolerance. So when Riverford asked if I would like to try one of their vegetarian recipe food boxes I was quite keen to see how we would get on.
I must admit that meal planning is not one of my strong points, like at all, so being sent all the ingredients and a recipe card is my idea of cooking heaven, and certainly takes the stress out of supermarket shopping. The box arrives with two dishes and the ingredients divided out, ready for your to get started and all with the exact measurements *YAY*.
Paul was a little sceptical at first when I started waving the words 'Cauliflower Korma' around, but as I was doing all the cooking he couldn't really complain ;) The recipe cards are super easy to follow and the veg all fresh from organic farms delivered straight to your door.
I love the idea that of having fresh food with no hidden nasties or pesticides, it's almost like living the allotment dream. Some people might say it's quite an indulgence but you can order a vegetarian recipe box that contains two meals for 2 people and it works out around £6 per person per meal, which I think is great value and would certainly benefit someone like me who often runs out of time and ends up making the same four dishes on repeat.
The Cauliflower korma was surprisingly delicious and filling * so much so that we forgot to take a photo of the finished meal* and even got a thumbs up from my steak loving other half, this makes me think that I could potentially try eating a more vegetarian diet and still make it fun.
After trying the recipe food box I do think that this might be the perfect antidote to all the Christmas feasting and make a good gift for the foodie in your life, especially if you offer to do all the cooking. It has made me really think a bit more about what we eat and how I can spice up our weekly meals. Watch this space!
