CHERRY HEALEY AND THE CACTUS KITCHEN // RECIPES IN GLASS



The lovely people at Friends of Glass asked if I would like to join them in creating some wonderful recipes at the beautiful Cactus Kitchens in London with no other than *girl crush* super mama, TV presenter, Cherry Healey. Obviously I jumped at the chance and headed down to London last Friday with the lovely Fritha who was also attending. On arrival we were greeted with the smell of hot coffee and fresh pastries which I readily tucked into while chatting to some of the other bloggers and admiring the beautiful flowers that adorned the room.

We were taken upstairs where ten cooking stations had been lovingly set up for us to use, ingredients measured out and utensils at the ready. I love cooking so this was a real treat and I was excited to get started. Sitting at the front of class, the lovely Chef Cara demonstrated a few simple recipes with the help of Cherry; think oohs, ahhs and a lot of laughter and you get an idea of how they were received. In a true Blue Peter moment of "and here's some we made earlier" beautiful glass jars filled with scrumptious beetroot hummus and glasses of strawberry and banana smoothies were handed around the group, trying not to get distracted by the tasty food we watched on as cocktails were made, ready for us to try later.

Never one to shy away from a challenge, I mentally took notes as Cara and Cherry took us through a step by step guide on how to make an Autumn Trifle with Poached Pears, the demonstrations were punctuated with bursts of laughter as Cherry commentated during the cooking and and got stuck in whisking cream. We then headed back to our stations to try the recipe on our own and compete to be best in class. I was lucky enough to be working opposite the lovely Simone who gave me a good giggle while cooking up a storm. 

It was such a joy to cook in an organised kitchen, with all the utensils you could ever need at hand. I quickly made my way through the recipe, learning how to poach pears, make homemade vanilla custard and whipped cream, before layering it all in a glass dish and scattering with toasted almonds.

We soon moved on to a slightly more complex recipe of Wild Mushroom, Spinach and Butternut Jar Pie, which as you can guess is served in a jar. Handfuls of colourful wild mushrooms foraged that morning were handed round and everyone quickly got cooking. After layering up our jars we promptly took our dishes downstairs where the table was beautifully laid out with fresh salads, warm bread and chilled wine, and we tucked into our creations.


I can't wait to try out some recipes at home and present them in glass jars, not only is it environmentally friendly it looks super pretty too!

  12. That whole day looks delicious from start to finish! And I must admit there is something really nice about eating straight from the jar so this really appeals to me, especially as it's all about the layers/colours you can see through the side. Sounds Fun! x
